Fermented Broccoli Kraut
So you have heard about fermented vegetables, but you haven't been brave enough to try to make them yourself. Or perhaps you are just looking for something new and simple to try because you are weary of chopping, shredding, or dicing your fermented vegetables. This fermented broccoli kraut recipe is so simple, so healthy, so quick, so inexpensive that you will be forced to give it a try!
I have included pictures (and a video at the end) to help you along.
What you will need:
1 - 12 ounce bag of Organic Broccoli Slaw from Trader Joe's
1 - Clean quart sized wide mouth Mason Jar w/ lid (no need to sanitize - unless you want to)
4 - Tablespoons of organic whey (optional)
1-2 Tablespoons sea salt (also available at Trader Joe's).
Clean water
Step One: Go to Trader Joe's and pick up the ingredients for your Fermented Broccoli Kraut (if you have no TJ's nearby - improvise).
If you want to use whey, check your local farm or ask a friend - or strain some Trader Joe's yogurt overnight through a coffee filter. Best is organic raw whey. Check RealMilk.com for options near you.
Step Two: This step is optional, but beneficial and preferred. Place 4 tablespoons of liquid living whey into an wide mouth Mason jar.

Step Three: If you added whey, add 1 tablespoon sea salt into jar.
If you did not use whey, add 2 tablespoons sea salt into jar. Add some water if you aren't using liquid whey.

Step Four: Cut corner off of Broccoli Slaw bag, and stuff slaw into wide mouth Mason jar.

Step Five: Using the inside of the Slaw bag, stuff Broccoli Slaw tightly into Mason jar.
You may have to be aggressive, but it will all go into the quart sized jar. Leave about an inch headroom.
Press Slaw Down Until 1" of Headroom is Left in Jar

Step Six: Add water until slaw is covered.

Well water is a good choice for cultured vegetables. But most people have city water. Presently I use a 5-stage reverse osmosis alkalizing filter by Eden Filters. It is similar to this model on Amazon. If you have city water, don't use it unless it is well-filtered. Otherwise use spring or distilled water. The main thing is to not be putting any toxins into this life-giving food.
Add Water To Top of Slaw
Step Seven: Screw on lid very tight. Shake or turn jar several times until whey and salt are mixed and evenly distributed throughout slaw.
Let jar set for at least three days at room temperature (up to a month or more depending on taste). You may refrigerate after opening, but it is not necessary. You are well on your way to enjoying your Fermented Broccoli Kraut!

Step Eight: After waiting at least three days, open the jar carefully because the veggies are alive and the liquid can bubble out.

Step Nine: Eat and enjoy your Fermented Broccoli Kraut.
Be sure to drink the juice. It tastes wonderful, makes you feel good, and is loaded with nutrients. You will notice that the color of the vegetables has changed considerably.
The last time I was at Trader Joe's they were selling an organic cabbage slaw. You could use this with the same method described here.

You can also add your favorite spices to your fermented vegetables. Oregano is a great addition to this recipe, and a great detoxifier. Use as much as you like to taste — but don't overdo it. Oregano is a powerful herb.
